Baked Tomatoes


4 large firm tomatoes

1/2 c. dry bread crumbs

3 T finely copped parsley

1 clove garlic, minced

1/4 t. fresh ground pepper 1 1/4 t. salt

1/4 c. olive oil
Cut tomatoes in 1/2 crosswise. Mix together dry ingredients and 2 T of oil. Spread into tomatoes. Put in oiled baking dish and sprinkle with remaining oil.
Bake in 400 degree oven for 14 minutes.
Top with mozzerella or parm cheese and let bake less than 1 more minute.
