

This is my favorite recipe for delicious, tart lemon squares.
Lemon Bars
Crust:
3/4 C butter
1/3 C sugar
1 1/2 C flour

4 eggs
1 1/2 C confectioner's sugar
5 T flour
3/4 C lemon juice (can add 1 t grated lemon peel, if desired)
Heat oven to 350 degrees. Mix flour, butter and sugar. Press evenly in ungreased square pan 8x8x2 inches, building up 1/2-inch edges. Bake 20 minutes.
Beat remaining ingredients except powdered sugar until light and fluffy, about 3 minutes. Pour over hot crust. Bake just until no indentation remains when touched in center, about 25 minutes longer; cool.
Sprinkle with powdered sugar.
cut into about 1 1/2 in. squares. Makes 25 squares.
