Healthy Hoisin Chicken and Broccoli Stir-Fry
1 T veg. oil
Cooking spray
1/3 C fat-free chicken broth
3 T hoisin sauce
2 T dry sherry
2 T orange juice
1 t cornstarch
2 t bottled minced garlic
2 t minced fresh ginger
1/2 t sesame oil
1 lb chicken breast tenders
3 C broccoli florets
1 8 oz. can whole water chestnuts, drained
Heat veg. oil in a large skillet coated with cooking spray.
Combine broth and the next 7 ingredients. Add chicken to pan and saute 2 minutes.
Add broccoli, and saute 5 minutes. Add chestnuts, and saute 2 minutes.
Add broth mixture and cook 2 minutes until sauce is slightly thick, stirring constantly.
Serve over brown rice.
