I could be in trouble. But here is Mama C****'s secret tomato sauce recipes:
Tomato Meat Sauce
Heat in a large saucepot 1/4 C olive oil
Add and cook until lightly browned 1/2 C chopped onion and 1 small garlic glove
Wipe with a clean, damp cloth, add and brown, turning occasionally 1/2 lb. ground beef
and 1/2 lb. pork shoulder or 1/2 lb. Italian sausage (optional)
Add slowly a mixture of:
7 cups tomatoes (canned), sieved
1 T salt
1/4 t oregano
1 bay leaf
Cover saucepot and simmer over very low heat, 3-4 hours.
Add 3/4 cup (6 oz can) tomato paste
Simmer uncovered over very low heat, stiring occasionally, about 2 hours or until thickened. If sauce becomes too thick, add 1/2 cup water.
Remove meat and bay leaf from sauce. Serve over cooked pasta of choice.
Marinara Sauce
Heat in a large skillet:
1/2 C olive oil
Add and cook until browned
2 medium-size cloves garlic, sliced
Add slowly, stirring constantly, a mixture of
3 1/2 cups tomatoes (canned), sieved
1 1/4 t salt
1 T oregano
1 t chopped parsely
1/8 t pepper
Cook rapidly uncovered 25 minutes, or until thickened. Stir occasionally. (Can let simmer for 1-2 hours for more flavor).
If sauce becomes too thick, add 1/4 to 1/2 c. water. Makes 4 cups.
