Texas Black Bean Soup Recipe (Smooth)

1 C dry black beans
1 onion, chopped
3 cloves garlic, chopped
1 small leek, chopped
1 stalk celery, chopped
4 sprigs fresh cilantro
1 quart chicken stock
Juice of 1 lemon

Cook dry beans according to directions on package.

Saute onion and garlic. Add the chopped leek and celery until tender.
In large pot boil chicken stock and add the beans. Add other ingredients. Pour mixture into food processor and blend. Season with lemon juice.
